Headwaters began as a conversation between Ryan and a local farmer about what to do with a recent grain harvest. The farmer had some extra grain and wanted to see if Ryan wanted to do something with it. We milled, fermented and distilled that grain and it is now our favorite “White Whiskey” on the market. The difference is the grain, Triticale. Developed back in the late 1800’s as a wheat – rye hybrid it has a unique flavor that we love! Headwaters is often described as a bit lighter and sweeter than other white whiskey’s but it also finishes with what is often called a traditional whiskey finish. It even has a apple/pear note that many recognize.
Neat, over ice or as a mixer this one stands out. Our loyal customers call it their “Utility” bottle as it mixes with just about anything.
