Headwaters began as a conversation between Ryan and a local farmer about what could be done with a recent grain harvest. We milled, fermented and distilled that grain (triticale) and it is now our favorite “White Whiskey” on the market. Developed back in the late 1800’s as a wheat-rye hybrid, triticale brings a unique flavor that we love! Headwaters is noted to have an apple/pear character that’s a bit lighter and sweeter than other white whiskeys, while still maintaining a traditional whiskey finish.
Remarkable neat or over ice, our loyal customers call it their “Utility” bottle as it mixes with just about anything.
